Holiday brights: Quick mint chocolate truffles

Don’t pay a fortune for hit-and-miss chocolates when you can make your own in no time – for a fraction of the cost. In this recipe, I use mint chocolate chips, but you can use any kind you like and achieve the same perfect, delicious result.

Ingredients:

  • 12 oz. mint chocolate chips
  • 2 tablespoons canola oil
  • cocoa powder
  • confectioners’ sugar

Instructions:
1. Add chocolate to microwave safe bowl. Stir in canola oil and microwave for 90 second, stirring every 30 seconds.

2. Refrigerate for 2 hours until firm.

3. Using a metal teaspoon, roll chilled chocolate into balls. Roll quickly between the palms of your hand to achieve perfect circles, if necessary.

4. Roll 1/2 of the truffles in cocoa powder and the other half in confectioners’ sugar.

5. Serve immediately or store in airtight container for up to 2 weeks.
